This past year has been quite a ride! Who would’ve thought we would end up in the middle of a pandemic!
I know this year has been tough on everyone. I’d like to express my sincere gratitude to all of you for being so cooperative and understanding during these difficult times.
I’m so happy to be able to say that we are finally able to return to some sense of normalcy around here. To be able to allow you to have your family members visit is a day we’ve all been waiting for. I couldn’t be happier to say that day has finally arrived!
I also would like to say thank you to everyone who received their covid vaccination. This is a huge part of what allows us to gather in groups, have visitors, and being socially active. Your consideration for others has not gone unnoticed.
I can’t wait to see what 2021 has in store for us! Thank you, again! – Wendy

Lemon Curd with Berries
Ingredients
- 2 tablespoons lemon zest
- 1 cup lemon juice
- ¾ cup sugar
- 6 large eggs
- Pinch of kosher salt
- 1 cup unsalted butter
- 2 cups mixed berries
Directions
- Simmer lemon zest, lemon juice, and ¼ cup sugar over medium heat. Whisk to dissolve sugar.
- Whisk eggs, salt, and ½ cup sugar in a bowl. Whisking constantly, pour one-quarter of the lemon mixture into the egg mixture. Then, add egg mixture to the remaining lemon mixture in the pan. Cook over medium heat until thick.
- Scrape lemon curd and butter into a blender. Blend thoroughly.
- Transfer to bowl and chill.
- Serve and top with berries.

What’s Happening at the Village at Southlake
April 2021
Heart Healthy Exercise – this class lasts 50 minutes at 10:00 a.m. Monday, Wednesday, and Friday. It is a combination of light aerobics, balance, weights, stretching, and flexibility work. Most of the class is seated with some standing work for balance work.
Balance and Strength Class – this class lasts 30 minutes at 1:00 p.m. Tuesdays and Thursdays. This class is for those with walkers who want to work specifically on balance and strength training while using a walker. Please see Debbie if you have questions.
Balloon Volleyball – 10:00 a.m., Tuesdays, Palmetto Theater. Join us as we sit and bop a huge balloon around! No skill needed. Just a desire to have fun!
Gateway Doctor Here – Tuesdays at 1:30 p.m. in A201. Please call Gateway for an appt. at 803-315-5450. He can be your Primary Care Physician or see you for an illness.
Puzzles – Check out the puzzles at the sign-up table such as cryptograms, crossword, Sudoku, and word searches.
Bible Study with Amber – 1:45 p.m., Tuesdays in the Palmetto Theater. All are welcome to this ecumenical study of God’s Word.
Bell Choir Rehearsal – Thursdays (note the day change) at 3:45 for 30 minutes. You don’t need to read music! If you can flick your wrist then you can be in the bell choir! We will continue to learn songs to perform in the future at special events.
Quarter Bingo – Monday and Thursday at 2:30 p.m. and Saturday at 10:00 in the Palmetto Theater. Please bring 3 quarters to play. There will be no prizes.
SHOPPING at WALMART, PUBLIX, AND SURROUNDING STORES. Please note the day and time change. We have moved it to the morning as the weather will be cooler in the mornings. Fridays, 10:00 a.m. with return at about noon. Please sign up. On Friday, April 16, we will go to the 378 Walmart and surrounding stores. When you sign up, please indicate on the sheet your destination. The other weeks we will be going to the Red Bank Walmart and Publix.
Hamrick’s Store Trip – Friday, April 2, 1:00 p.m., Please sign up.
Hymn Singing – Wednesdays at 2:00 p.m. in the Palmetto Theater. Sometimes we have Amber play the piano, other times we sing with a video on the large screen. It’s ok if you don’t want to sing. You can listen!
Church Services with Grace Baptist – Sundays at 2:00 p.m., Palmetto Theater Join us Sunday, April 4 for our own Easter service with Grace Baptist Church in the Dining Room. Our new bell choir will be performing so join us! Services with Grace will continue on Sundays at 2:00 p.m. in the Palmetto Theater.
Resident Council Mtg. – Monday, April 5, 1:15 p.m., Library. Please note this meeting is for the committee only. If you have questions or concerns, please put those in the suggestion box.
New Resident Meet and Greet – Wednesday, April 7 at 3:30 p.m. Hemingway Lounge. Please come and help our new residents to feel welcome. Light refreshments will be served.
Men’s Lunch Trip to Café Strudel – Friday, April 23, 11:45 a.m. Please sign up. If you are able to drive, we ask that you do so to allow others to ride the bus.
World’s Biggest Crossword Puzzle has been changed! The puzzle is not available right now so instead at 1:00 p.m., Wednesdays in the Palmetto Theater we will be playing Are You Smarter than a 5th Grader? Jeopardy, Family Feud and Wheel of Fortune! We will work together as one brain to figure out the puzzles! We may not go home with lots of cash, but we will have fun together!! Come play or watch!
Live Concerts are back! – Fridays, 6:00 p.m., Dining Room. Please wear a mask and continue to distance. Check the calendar for details.
Socials – These happen on various days and times. Come try a new food and chat with friends at the same time. There is no formal activity so you can come anytime in that 45 minutes.
The Chosen – Mondays, 1:00 – 2:00 p.m., Palmetto Theater. This video series is the largest crowdfunded series ever done. It is an in-depth look at the lives of those Christ chose to be His disciples. Excellent!
Tech Help with Debbie – Tuesdays, 11:00-11:30 a.m., Palmetto Theater. This is 1:1 help with your tablet, phone or laptop. Please sign up at the sign-up table. Come with your device!
Monday Afternoon Games – Mondays at 3:30 p.m. Check your calendar and come out and play or just come watch! Very fun!
Wellness Checks with Allison, 4/1 – 9:30 – 11 a.m., 4/15 – 3:00 – 4:30 p.m., A201. She will be doing blood pressure, weight, etc. Please sign-up for a 10-minute slot.
Pouring Paint Demo with Sara – Monday, April 26, 2 p.m. Club House. Come see this unique painting style by our residents Sara Brackin and Jane Freeman. They will demonstrate the technique and answer questions. There will be classes in May for sign-up.
Craft with Amber – 4/9, 1:00 pm., Palmetto Theater. Beautiful Sun Catcher! A picture is available on the sign-up sheet. Please sign-up.
Carnival Day, Saturday, April 24, 2:00 – 5:00 p.m. Invite friends and family to this day filled with games, food and fun! This is a marketing event so invite your friends who might be looking for a place to meet new friends and have fun!
